This recipe come from the Robin Hood All Purpose Baking Flour Recipe Book that my mom had.
I have memorized this recipe. I can do it in my sleep, and sometimes I do.
- 3 Dry ingredients
- 1.5 cups flour
- 1 teaspoons of baking powder
- 4 tablespoons of sugar
- 3 Wet Ingredients
- 1 Egg
- 2 tablespoons of vegetable oil
- some milk.
In a mixing bowl sift together the dry ingredients.
In a 2 cup measuring cup add the egg and oil.
Add enough milk to get to 2 cups.
Use a fork to beat egg, oil and milk ingredients.
Add wet ingredients to dry.
Stir , but stop before it's completely mixed.
If you do, you will not have any "bubbles" in the mix that would otherwise keep the pancakes light.
- Optional bits
- use a second egg for "meatier" denser higher protein pancakes.
- add a 1/2 teaspoon of vanilla extract for extra delicious.
- Fold in blueberries or chocolate chips.
