All THe basics:

  • use Roma tomatoes ( aka Paste Tomatoes )
  • Remove the skins and seeds
    • cut an X on the bottom of the tomatoes and dunk in boiling water for 10 seconds
    • plunge in ice water
    • Skins come off ! Voila!
    • remove bad bits and seeds
    • This reduced the bulk of you tomatoes but leaves the best bits for sauce.
    • put the skins and seeds in your compost
    • Add seaonsing and simmer the crap put of it. Times vary.
    • for bottling: add some lemon juice to the filled jard before sealing.

For Tomato Paste

    • Add [#Seasoning]
    • Blend into slurry
    • Spread the slurry on a cookie sheet and bake at 200 for as long as you care.

Seasoning

Use some none or all

  • Basil
  • Oregano
  • salt
  • pepper
  • Bay leaf
  • olive oil
  • garlic
