Fry:

  • 1 tablespoon cumin
  • 1/2 teaspoon fenugreek
  • 1/2 tablespoon channa dalh
  • 1/2 tablespoon uncooked rice
  • 1 tablespoon coriander seed
  • 1 pinch hing
  • 2 cloves
  • 1 green cardamom
  • 6-7 garlic clove
  • 1 innch ginger
  • 2 tablespoons coconut
  • Sprig of curry leaves
  • Some whole red chillies ( 3-4 )

fry, then add:

  • 1/2 haldi ( tumeric? )
  • chillies
  • 1 onion
  • 1/2 teaspooion salt

fry for a bit, then remove from heat and cool.

Make paste of it in a blender then put it in a pot with:

  • More green chillies
  • veggies of choice eg:
    • cauliflour
    • chopped tomato
    • carrots?

fry on high, then add soaked tor dalh

Then add water 8X Dahl

IN a pressure cooker cook for 5 whistles, which I think means cook the bejesus out of it.

Then add tamarind and jaggery ( or plain old surgar ) to taste.

Time to make the final tarka

  • oil
  • 1 teaspoon black mustard seed
  • red chillies ( 3 - 4 )
  • hing
  • curry leaves

Pour over the sambar, and enjoy with idli or some other bready thing.
