Sambar

Fry:
- 1 tablespoon cumin
- 1/2 teaspoon fenugreek
- 1/2 tablespoon channa dalh
- 1/2 tablespoon uncooked rice
- 1 tablespoon coriander seed
- 1 pinch hing
- 2 cloves
- 1 green cardamom
- 6-7 garlic clove
- 1 innch ginger
- 2 tablespoons coconut
- Sprig of curry leaves
- Some whole red chillies ( 3-4 )
fry, then add:
- 1/2 haldi ( tumeric? )
- chillies
- 1 onion
- 1/2 teaspooion salt
fry for a bit, then remove from heat and cool.
Make paste of it in a blender then put it in a pot with:
- More green chillies
- veggies of choice eg:
- cauliflour
- chopped tomato
- carrots?
fry on high, then add soaked tor dalh
Then add water 8X Dahl
IN a pressure cooker cook for 5 whistles, which I think means cook the bejesus out of it.
Then add tamarind and jaggery ( or plain old surgar ) to taste.
Time to make the final tarka
- oil
- 1 teaspoon black mustard seed
- red chillies ( 3 - 4 )
- hing
- curry leaves
Pour over the sambar, and enjoy with idli or some other bready thing.
